Fossa Chocolates

It’s the festive season, and we all typically find ourselves scurrying through malls to get gifts for our loved ones. Everyone knows that the best gifts are the ones that you can eat, so here is a craft chocolate that you can consider tucking in a stocking this year!

At Fossa Chocolate, the chocolates and confections are handcrafted from scratch in their workshop in Singapore.

Cacao Beans

Firstly the cacao beans go through a process of roasting, secondly cracking and finally winnowing to refine them into chocolate. They are later then are moulded into bars and packed individually by hand. It is a long and tedious process but handcrafting them in small batched achieve to showcase the unique floors and nuances of each batch.


Farmers

The team works with farmers who have dedicated their whole lives to the art of cacao cultivation and fermentation. Only the highest quality of cacao are bought to work with, and it is evident in the taste of the chocolate. These are also the top 5% of the world’s cacao cross, and fossa pays a premium for the reason that they can get their hands on these crops so that we can soar the deep flavours and complexity of these craft chocolates.

My favourite is the UJI MATCHA which is made from “Watakake” grade – the highest degree of culinary matcha, from Japan’s most highly regarded matcha maker— Marukyu Koyamaen. The bright green colour and umami in the chocolate showcase the exceptional quality of the matcha.

Latest Launch – Rustic Gems

Rustic Gems is their new and most noteworthy product, and the concept is to bring one back to how ancient chocolates used to be like! It is simple and made with only two ingredients – cacao beans and sugar. They are carefully prepared by Pak Eddy (local term for Uncle Eddy) in his small estate in Yogjakarta, Indonesia. These little flour bombs also pair well with coffee, whisky and rum.
